Dairy-Free, Whole Wheat Chocolate Chip Pancakes

Ok, these are officially called "Coconut Oil Pancakes" from a fellow blogger, who posted the original recipe, but I took liberty to alter it. Her recipe is here. Mine isn't too different, but includes Hemp milk instead of cow milk, whole wheat, and chocolate chips.

1 C flour (stoneground whole wheat)
1 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
---
1 beaten egg
1 C Hemp milk and/or Sweetened Vanilla Almond Milk
2 Tbs. Coconut oil (melted)
---
 1/2 C or more of semi sweet chocolate chips (Ghirardelli, contains no dairy!)!

Add dry ingredients and whisk together, then add wet ingredients and lastly chocolate chips. Grease and cook on griddle. Make sure batter isn't too dry, you can add more liquid (hemp/almond milk) if you need and should have the wetness a normal "pancake batter" has. Her recipe said 3/4 C milk, but it was way too dry and I just added Hemp milk till it was nice and moist (I also doubled this recipe so there would be enough for four adults). When cooking, you'll know to flip the pancakes over when they start to get air bubbles surfacing, or when they turn golden underneath. It's an awesome recipe and was so happy they turned out well for our family visiting!
